Port

Port is a sweet, fortified wine made primarily in the Douro Valley of northern Portugal. It's unique within the fortified wine category, where alcohol is added during fermentation to preserve natural sweetness while boosting the alcohol content to around 18-22%. The wine is typically made from red grape varieties like Touriga Nacional, Tinta Roriz, and Tinta Barroca.

The process begins with crushing the grapes, after which fermentation is partially halted by adding a grape spirit (aguardente), which keeps the residual sugars intact. The fortified wine is then aged in barrels or bottles, which influences its flavour profile. There are various styles, such as Ruby Port, which is fruitier and aged in large vats, and Tawny Port, aged in smaller barrels to develop nutty, complex flavours.

Port has a rich history, dating back to the 17th century when it became popular in England due to trade wars between England and France. The English, in search of an alternative to French wine, began importing wines from Portugal. To prevent spoilage during shipping, these wines were fortified, creating what we now know as Port.

The Port trade is still significant today, and Portugal remains the exclusive producer of Port, with strict regulations governing its production under the Instituto dos Vinhos do Douro e do Porto (IVDP), ensuring authenticity and quality.
