Tequila / Mezcal

Tequila is made using the Blue agave plant – and more than 300 million of them are harvested each year. Apart from the location – Tequila differs from Mezcal because it can only be made using blue agave and it’s also made a bit differently too. The agave is cultivated to not flower so that the pina can develop fully.They are slowly cooked. The cooked agave pinas are then crushed before being fermented in stainless steel tanks. This juice is then distilled twice.

Mezcal is made from any type of agave and the way it is made is virtually unchanged since it first became popular more than 500 years ago. the sacred agave was used in mexican rituals and ceremonies and the cooking of the pina, (the heart of the agave) and the fermenting of it was developed with mythological origins after it was said a lightening bolt struck an agave plant, cooking its content. On opening the fermented result, it was described as the “elixir of the gods”. The story is good enough for me – it’s a wonderful drink. Usually consumed straight up in Mexico but of course wonderful in cocktails. We are always searching to bring the best from Mexico to our little shop in Brighton. We hope you enjoy our selection.
