Saison
Also referred to as farmhouse ales as they were originally brewed on farms during the Belgian summers as light refreshing drinks with low to moderate alcohol levels. They are generally pale in colour with spritzy carbonation displaying subtle (citrusy) fruit aromas and spice. The inclusion of certain spices and herbs will lend each Saison a signature style. Similarly, modern takes on the genre vary widely, with higher abv versions being produced as well as barrel aged examples and / or those conditioned on fruit. Specific yeast strains and mixed bacteria are key components in all styles as is a higher fermentation temperature.
