Dubonnet is a type of fortified wine, produced in France.

It is made using a blend of fortified wine, herbs and spices and has a distinctive taste that is both sweet and slightly bitter. Dubonnet is categorised as an aperitif meaning that is is typically consumed before a meal to stimulate the appetite.

Dubonnet was first produced in 1846 by Joseph Dubonnet, a French chemist who was looking for a way to make quinine, a medicine to treat malaria more palatable. He combined quinine with the fortified wine alongside other ingerdients to create a classic drink that became famous worldwide.

Cinnamon, cloves, nutmeg and quinine ( plus secret ingredients) are combined with red or white wine. It is then sweetened with sugar before being aged in oak barrels for several months.

Dubonnet can be enjoyed on its own or combined to make a variety of cocktails. One popular way to drink it is with tonic and orange slices or you could try the Dubonnet cocktail - enjoyed famously by Queen Elizabeth 11. This cocktail combines Dubonnet with gin, bitters and a twist of lemon - served with two ice cubes before lunch every day.
