The term Old Tom Gin usually denotes that the juniper has a less heavy presence in the overall flavour profile. Old Tom Gins are generally speaking more alike to a dutch genever. They are lighter, sweeter and softer in style. They may or may not also be aged a little in oak.

Old Tom Gin's were named so because of the cat shaped plaques on display outside pubs to show consumers that this was a place to purchase gin.

The government crackdown on the gin craze in the 18th Century meant that extremely high taxes drove the gin scene underground. Underneath the cats paw would be a place to put a penny. Beside this a tube would pour out a tot of gin - from the bartender inside. Sadly we no longer have these outside pubs or houses of ill-repute but we do have the Tom Collins cocktail, in which an Old Tom gin is an essential ingredient!
