Itata Paraiso is a winery that has been in operation for 4 generations, handed down through the family located east of the Coast Mountains in Portezuelo. They have extremely old vines of Pais, Moscatel and Carinena and strive to produce wines that emphasise their most pure and true form. This means they use minimal intervention in the vineyard and winery, and fermentation is completely natural.
This is made using Pais, which spends time maturing in old French oak before undergoing partial malolactic fermentation. The rustic nature of this variety shines through, with fresh fruit aromas and flavours of strawberries and red apples, finishing with a hint of earthiness.
