Created as a medicine over 500 years ago by the Chartreuse monks in Vauvert, a small suberb of Paris, Green Chartreuse is the only green liqueur in the world that has a completely natural colour. It is made using 130 diiferent plants and the recipe is a secret still kept by two Chartreuse monks. The method in which the liqueur is mascerated in order to preserve the vibrant colour is also a closely guarded secret - as is the slow aging process in wooden casks. The sales of Chartreuse fund the monks to this day.
Yellow Chartreuse is milder and sweeter than its green cousin - and like Green Chartreuse, the colour is 100% natural. The yellow Chartreuse was not made until 1838
To savour the flavour, consume cold or on the rocks as an after dinner digestif. The flavours are sweet, still pungent and herbaceous but its certainly a mellower flavour profile. In some cocktail bars it's served simply with tonic or with white port, gin and a twist of lemon. Yellow Chartreuse is not vegan.
