Absinthe La Fee Parisienne

Absinthe La Fee Parisienne is an iconic spirit that hopes to capture the essence of the Belle Epoque era in Paris. It has been meticulously crafted with a nod to its infamous reputation and perhaps if you're lucky enough offers a glimpse into the world of the Green Fairy.

Absinthe La Fee Parisienne is made in Pontarlier, in eastern France near the border with Switzerland.  Pontarlier is highly regarded as the birthplace of Absinthe production. The distiller, La fee Absinthe, has been a pioneer in the revival of absinthe production. They began to remake it in 2000 as soon as the ban was lifted. They continue to use traditional methods of production and thus many recipes are faithfully recreated in the old-style pre-ban era of the 1800's.

There is a delicate balance of botanicals which include grand wormwood, green anise and fennel. These ingredients are distilled using traditional copper alembic stills. La Fee Parisienne use a natural colouring method known as the "trinity" process. This involves mascerating the botanicals in the base spirit which imparts a natural green colour to the finished product and is identical to the techniques used in the 1800's.

Enjoy this traditional style - with a cube of sugar and some chilled water.
