We think this is the first Mexican whisky to launch in the UK.

Abasolo is made from 100% Mexican Cacahuazintle corn. The whisky is double-distilled in copper stills and matured in new toasted and used oak casks by the wonderful team at Destileria y Bodega Abasolo found in Jilotepec in the heart of Mexico's corn belt. This region is renowned for its volcanic soil - which is highly fertile and so ideal for the cultivation of the special ancestral corn used in the production process.

What sets Abasolo apart is the meticulous production method, inspired by traditional techniques passed down through generations. The Cacahuazintle corn is a unique heirloom variety that imparts distinctive flavours and aromas. The corn is cooked in traditional stone ovens and then ground using volcanic millstones. This helps to preserve the corns natural character and rich velvety texture.

After fermentation, the liquid is double distilled in copper pot stills and this extracts the maximum intricate flavours. The ageing process takes place in a combination of new and used oak barrels, giving depth and complexity over time.

Flavours of roasted corn, toffee and caramel. It is recommended to be enjoyed near, or with a slice of orange, or mixed with ginger beer or coconut water.
