Invented in 1912 by the Barbieri brothers who inherited a liqueur company from their father, it took them seven years to perfect the recipe. Aperol became popular in Italy during the 1930's but it wasnt until the 1950's that it was paired with sparkling wine to create the famous "Aperol Spritz". During the 1990's Aperol began to be exported and has gradually become internationally known and loved.

The flavour profile is bitter and complex and has gained in popularity over the last few years. Us Brits are starting to appreciate the herbal, bitter  orange flavours, though it is considerably sweeter than the global phenomenon Campari. For the perfect Aperol Spritz fill a wine glass with ice and combine prosecco and aperol in equal measures. Add a splash of soda water and garnish with a slice of orange.
