Sherry
Sherry is produced in the Jerez region of Spain where the weather is hot and humid with some cooling coastal winds. These fortifieds are made using a solera system which steadily siphons off new and ageing sherry through the barrels to create a consistent product. There are a few different styles of sherry, some that are oxidatively aged (barrel aged and allowed a certain exposure to air) and some that are biologically aged (aged in the solera system under ‘flor’ which is a form of yeast that alters the flavour profile of the wine). There are also non aged wines, and more and more producers are experimenting with creating unfortified wines with popular sherry grapes - particularly, Palomino.
