Konishi Shuzo are the oldest brewery owned by one family, the Konishi family, starting in 1550 and due to this they have a broad range of sake that they produce. They were the first to produce clear sake, discovered as an accident when some ash was dropped into a batch! Although don't let their history fool you, they are constantly at the forefront of innovative creations and state of the art technological techniques.
de Ai – meaning “perfect match” – has a very approachable profile. Crisp elderflower, peach, grape, citrus & grapefruit are present on the nose leading to similar flavours but with additional green apple notes. Light-bodied, dry with a lovely, fine mouse; this is a sophisticated & refreshing sparkling sake with good and refreshing acidity. Perfect as an aperitif or for relaxing on a summer’s evening.
Drink as an aperitif, or with Parma Ham and melon, or treat yourself with oysters.
