Here’s something exciting: Ukrainian wine has landed in Brighton.
And not just any wine; these are hand-crafted, small-batch bottles from the brilliant team at Biologist Craft Winery, a trailblazing producer working just outside Kyiv. They’re loud, proud, and making waves with wines that are as bold and beautiful as the country they come from.
We’ve just brought three of their best to the Seven Cellars for the very first time and we’re obsessed. Here's what you need to know:
Aligoté Crisp: Fresh, Zesty, Totally Unexpected
This is the wine that turns heads. Pale in colour but punchy on the palate, this Aligoté offers zippy citrus, grapefruit pith, and even a cheeky hint of blackcurrant leaf. It’s got a bright acidity and clean finish that makes it a dream with fresh seafood, salty snacks, or nothing at all.
Not your typical Aligoté and all the better for it.
Try it if you like: Picpoul, Muscadet, or anything that tastes like summer.
Aligoté Aged: Still Crisp, But a Bit More Going On
This is the original, richer take on the same grape. Still full of that citrus zip, but with extra depth and a touch of floral complexity. Think stone fruit, fresh-cut herbs, and a whisper of salinity from the Black Sea breeze.
It’s proof that Aligoté doesn’t have to play second fiddle to Chardonnay; it can headline the whole show.
Try it if you like: Unoaked white Burgundy, Assyrtiko, or wines with a mineral streak.
Orange Blend 'Slava Ukraine': A Toast to Freedom
Now for something completely different. This is Biologist’s orange wine, made with skin-contact Rkatsiteli and Sauvignon Blanc. It’s dry, funky, amber-coloured, and packed with dried apricot, orange peel, and tea-like tannins.
It’s called ‘Slava Ukraine’, meaning Glory to Ukraine and it’s as defiant, confident, and characterful as the name suggests. A portion of the profits even goes to supporting the country’s rebuilding efforts.
Try it if you like: Orange wine in general, natural/low-intervention bottles, or anything that sparks conversation.
