Yamatogawa Shuzo is a brewery in Fukushima that is 200 years old. They produce their own rice on the farm organically which is used to create the sake and their focus is on concentrated versions of sake that can be paired perfectly with various food dishes.
Pearl is a sparkling sake made using the traditional Champagne method - an initial fermentation followed by a second in bottle. It is a Daiginjo sake which is the highest level of quality in sake, the 'premier cru' standard. It is fruity, medium-dry and a little cloudy.
