Offbeat Wines are based near Salisbury in Wiltshire and with the aim to produce delicious, low intervention wines with environmental preservation and sustainability as the heart of their entire philosophy.
The grapes are pressed in a traditional wooden basket press, fermented spontaniously in a range of vessels including amphora and oak. The winery runs on solar power and the wines do not go through a fining or filtration process. Sulfites are used but in minute quantities - and only when absolutely necessary. Labels are printed on 100% recycled materials.
All this makes Offbeat wines a very exciting winery. The wines are clearly subject to our crazy weather and so of course we will find that these wines differ wildly from year to wonderful year.
Wild Juice Chase 2019 is a bright red pet nat using the grape variety Triomphe d'Alsace. Handpicked and transferred in whole bunches into a stainless steel vat where they underwent carbonic masceration and afterwards the whole bunches were gently pressed. The resulting juice was then left to spontaniously ferment for a further 8 days. The wine was bottled via gravity, with a touch of the natural grape sugar remaining. The sugar then continued to ferment in the bottle to complete fermentation. No added sulfites were used in the wine making process, no fining and no filtration. This is a vegan wine.
This has a brambly flavour, something a bit more minerally and savoury than the others.
