He creates 4 different styles of Chardonnay using innovative techniques and methods, including The Egg; a large, concrete vessel used for fermenting and the first of it's kind in New Zealand. A robust Chardonnay: vanilla bean from new oak, tropical flavours of mango and peach and ripe citrus leads to subtle spiciness on the finish. Suitable for cellaring; after a period of time those hazelnut notes will really shine through. The name of Heartwood comes from the use of only the heart of the 140 year old French oak being used to create the barriques used in the wine.
