Ki No Bi Gin is the first release from the Kyoto Distillery, founded in 2016. In an industry that is dominated by brands that have been in business for hundreds of years, this bright young thing has created something of a disturbance - something that raised an eyebrow or two among industry stalwarts because the gin is absolutely brilliant.
Inspired by and with respect for Japanese tradition, it is distilled, blended and bottled in Kyoto. This gin is made in a recognisable (ginny) dry style and so of course includes juniper but with distinct Japanese botanicals such as yellow yuzu, hinoki wood chips (Japanese cypress), bamboo, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries.
KI NO BI uses a rice spirit base and water sourced in the famous sake–brewing district, Fushimi.
The powerful flavours are bright and bold. Juniper and warming spices with tea undertones - just lovely. A super premium Japanese gin.
