Real tequila is made using the blue agave plant, which takes between 6 - 10 years to grow. It is a succulent found in specific Mexican regions. Famously production is segmented into seven steps: Harvesting, Cooking, Extraction, Fermentation, Distillation, Aging, Bottling. Every step is closely regulated by the Consejo de Regulador de Tequila to ensure the standards are exemplary. Of course every distillery has its own supply of agave and particular techniques which will differ and contribute to the final flavour.
Herradura has been aged for 11 months (just one month short of being classed as an anejo), Herradura claim to be the first company to age their tequilas in wood, making this the first ever reposado. Superbly integrated flavours.
