The philosophy of Domaine Genoux is "A truly great wine can only be a natural wine" Since 2009 the vineyard has practiced biodynamic winemaking methods, so no weedkillers or artificial pesticides are used in the vineyard at all. 100% natural winemaking is incredibly important so no yeast added, and no sulfites used either, just spontaneous malolactic fermentation, using whole bunches of hand harvested grapes which are pressed slowly and deliberately. The fermentation takes about 6-8 weeks in vats on the lees with about 10% aged in barrels and blended back in.
Sulfites are added on bottling.
The Deep golden yellow colour. The nose develops floral notes and fresh, minerality with apricot. On the palate, it is generous and reminiscent ripe apricots.
100% Jaquare grape variety
