The Chateau d’Ollieres is located 30 kilometers east of Aix in the village of Ollieres. Owned and made by the Rouy family where wine has been made for over 200 years. This delicate, salmon pink wine has been made naturally using three grape varieties Cinsault, Grenache and Syrah.
Natural wine is made without adding chemical processes and with minimal technological intervention in the growth of the grapes, and in the winemaking process. All-natural wines are organic and many are biodynamic as well. Nothing is added or taken away during the winemaking process.
Dry, crisp and fresh on the palate with excellent acidity and red berries. The finish is short yet refreshing making this a great food wine. Try with tomato, cucumber and goat's cheese salad, shellfish or roasted fish.
