Real tequila is made using the blue agave plant, which takes between 6 - 10 years to grow. It is a succulent found in specific Mexican regions. Famously production is segmented into seven steps: Harvesting, Cooking, Extraction, Fermentation, Distillation, Aging, Bottling. Every step is closely regulated by the Consejo de Regulador de Tequila to ensure the standards are exemplary. Of course every distillery has its own supply of agave and particular techniques which will differ and contribute to the final flavour.
Casco Viejo Reposado Tequila has been aged in oak for between two and twelve months. The resulting flavour has a baked agave, apple and vanilla with a soft and rounded mouthfeel.
