The organic production method means that the grapes are manually harvested before being fermented with skins for 20 - 25 days before being aged in oak barrels for 3 months. The wine has lovely spice and warmth with notes of green pepper. Tannins are very soft and rounded with a silky smooth texture. This is a wine with real freshness, finesse and great length. Pairs well with meat and tomato pasta dishes.
