Boon Gueuze - VAT 31
Frank Boon is regarded as the modern day saviour of Lambic beers which are defined by their characteristic tart flavour thanks to the use of wild yeast. The yeasts of the atmosphere descend into open vessels in the brewery and fermentation continues in large wooden casks. Geuze is a blend of a young lambic typically 6 months old and a lambic with a more mature vintage, in this case from VAT 31, Lambic taken from the brewery's 31st foeder.
