The Bacchus is a bit special as it is crafted from a blend of ‘early’ and ‘late’ picked grapes in order to create greater interest and balance within the wine and at least 3 separate ferments are run, using 3 different yeast strains to best release the varietal aromas. Grapes are whole bunch pressed under inert conditions and then slowly and gently fermented in stainless steel tanks in order to preserve the aroma profile with just enough residual sugar retained to give just a hint of softness..
Pale, pure and bright with a hint of lemon. Classic English Bacchus with clear hints to a New World Sauvignon Blanc. Intense aromas of English hedgerows (nettle, elderflower blossom, grass) with citrus and tropical fruit highlights (passion fruit, grapefruit, guava) lent by the long warm summer. Vibrant, fresh acidity, excellent minerality. Aromas translate through to the palate. Very refreshing with a lovely long lingering finish.
