Francois spent his formative years learning and understanding winemaking in Burgundy however his decision was to focus on creating Chardonnay wines that are different to those of the Burgundy appellation. Most Jura wines are Savagnin grapes and to claim the Chateau-Chalon AOC but Francois wants his own style so Chardonnay it is. He makes his wines by working with and following the climate.
His wines are complex, organically farmed and naturally vinified without any sulfites added during the bottling process. The grapes are from old vines and produce a wine with mouth-watering acidity. A complex nose of citrus, mushrooms and brioche, this is an elegant wine with a long, mineral finish. Enjoy with some mild soft cheeses or a creamy chicken dish.
